salmon tart, with caramelized onions and tarragon, oat bran paste


For the pastry:
- 2 eggs
-3 -4 Cs yogurt
tablespoons oat bran
- 2 tablespoons wheat bran

For the filling:
2 red onions chopped
20 cl thin vegetable broth or chicken

1 egg 1 egg white 10 cl
skim milk 150 g fresh salmon, skinless, cut into 2 cm pieces
2 tablespoons tarragon chopped fresh

Preheat oven to 180 ° and line with parchment paper pie pan of 20 cm in diameter.
Prepare the dough: Mix eggs and yogurt, then add sounds, mix well again. Pour into pan and spread with the back of a spoon by pushing up on the edges to make it as a shallow bowl.
Bake 12 minutes until dough is firm.
Meanwhile, grease with a paper towel, a skillet and melt the onions gently, then increase heat slightly and add a little broth and stir, let it evaporate, add broth gradually until the liquid evaporates. Book.
Mix egg white and milk in a bowl and then the onions and salmon and chopped tarragon.
pour the mixture over batter and bake another 20 minutes in the oven.
serve immediately or let cool before serving.
